Dietary depth, as infrastructure.
Eleven dietary flags as standard infrastructure — vegetarian, vegan, gluten-free, halal, kosher-style, dairy-free, nut-free, keto, pescatarian, low-sodium, diabetic-friendly — with separate prep for allergens and menus that name their protocols.
Settled before the shopping
Dietary flags live in the menu call, not the table announcement. The written menu labels every dish; the shopping respects it; the prep separates allergens with dedicated boards, pans, and oil. By the time anyone sits down, the questions are already answered.
One kitchen, one standard: the vegan courses are written with the same care as the fish, because on Kauaʻi the farms make that easy.
The retreat-grade version
Kauaʻi’s retreat work means protocol depth beyond the eleven flags: Ayurvedic-fluent menu families, detox and raw-leaning formats, multi-day plans where the labels carry across a week. If your group eats by a program, we cook by the program.
Honest limits, in writing
We cook in rental kitchens, not certified facilities. Separate prep is disciplined and real — dedicated equipment, sequenced prep, labeled storage — but severe airborne allergies get the full honest paragraph about what a private kitchen can and cannot guarantee, before you commit.
Questions, answered
No — the eleven flags are standard inside the published bands. Deeply specialized sourcing (a strict protocol week, hard-to-find ingredients) shows up honestly in the groceries-at-cost line, with receipts.
With dedicated prep sequence, clean equipment, and separate oil and boards — yes, and we describe the exact controls in writing. Rental kitchens aren’t certified GF facilities; the honest paragraph is part of the quote conversation.
The Kauaʻi norm. Courses are built so the vegan plate is a dish, not a subtraction, and the table shares most of the menu. The market’s greens carry it.

Kauaʻi runs inquiry-first: you tell us the table, we send a written quote — and that quote is the confirmed total. We never hold a date we can’t crew.
