The four steps
Every roster chef, before the first booking:
- Background check — identity and record, current
- Menu review — they cook; we taste; the menu register must match the claim
- Kitchen assessment — they’ve run rental and estate kitchens, or they learn under a senior before running one
- Insurance verification — coverage current, certificates available for venues
The island filter
Kauaʻi adds its own test: the road, the market, the rain. A roster chef knows the Saturday market by name, plans shopping around the bridge schedule, and has cooked through a squall under a tent without it becoming the evening’s story. Island competence is vetted like knife skills.
The backup rule
The roster exists so no booking hangs on one person. We never hold a date we can’t crew — if the roster can’t cover your date, the inquiry reply says so, honestly, within a day. Your written quote names your chef; the roster stands behind the name.
